Chicken Pho (vietnamese soup)
Pho is a popular vietnamese dish which consists of a light beef, chicken or vegetable stock seasoned with spices and served with noodles and a selection of vegetables, herbs and meat. This recipe is really to introduce you to pho, allowing you to recreate your own varieties according to your taste.

It's a great dish to use up left overs from a roast chicken. Not only can the meat go in the pho, but the carcass can be used to make the stock.

To make a vegetarian pho, use vegetable stock and remove the meat from this recipe.

Salmon with lemon and capers
A lovely light main course which is delicious served with boiled new potatoes and steamed brocolli.

Stuffed Peppers
A delicious taste of the Mediterranean that doesn't pile on the pounds. Eat with rice or salad as a main course or by themselves as a starter.

A light rice dish that can be served as a main meal or as a smaller starter. To cut back on the calories, eat a smaller risotto portion as a main meal with a side salad.

Chicken Jalfrezi
This is a quick and easy low fat chicken curry recipe that tastes as good as a take away, but without all the calories.

To make a vegetarian version substitute the chicken for more peppers, courgette pieces or potatoes.

The heat of this dish can also be tailored to suit your taste by adjusting the level of chilli powder and fresh chillis.

Some professionals are advocating eating porridge on a regular basis as a way to can help reduce the risk of getting Type 2 (Adult onset) diabetes.

This simple topping for toasted bread tastes amazing and can really only be made with fresh peas or broad beans. It is healthy and flavoursome and best of all is a true taste of summer.

Low calorie pasta with scallops
This came from Chris and Nic's recipe pages. I liked the suggestion of using dried pasta rather than fresh, since the fresh pasta has eggs in it, which makes the calorie count and cholesterol levels rise. This recipe serves two people.
